Simple Raw Lunch

I have 2 children.  My first is perhaps the pickiest eater alive!  I really don’t exaggerate.  He eats no vegetables what so ever!  Last summer I was thrilled when I actually got him to try a cucumber from our garden!.  He doesn’t even eat pizza! What child doesn’t love pizza!!  He likes simple and plain foods.  Occasionally he will eat watermelon or cantelope.  I go out and buy a lot of what ever fruit he is interested in!!! I really only have myself to blame as I was always a picky eater as a young child and would have rather had a chocolate bar then vegetables any day!!  Truth be told, I still LOVE chocolate but also enjoy a good salad and love fruit now.  So I know there is hope for him!

Because he is such a picky eater I am always looking for ways to get something healthy into him!!  I have made pancakes with ground flax seed in them and cookies with flaxmeal instead of all the sugar!!

Other strategies I have tried:

  • Choclate chips in muffins
  • Zuchinni bread
  • Sandwiches cut in dinosaur shapes
  • Choclate covered bananas
  • Choclate covered strawberries (have you guessed he love choclate yet? LOL)

I recently discovered  The book Deceptively Delicious by Jessica Seinfeld. This book gives creative ways to get healthy food into your child!!  I was all over it!!  I haven’t tried all the recipes in it yet, but the ones I have tried are good.  Some require a little more work to prepare as they have vegetable purees you put in them.  What I have done is doubled recipes and made extra puree’s and frozen them.

One recipe that was a hit is the bananna bread with cauliflower puree!! I would have never have thought of adding that!!  I have even added some ground flax seed to it for extra nutritional value!!

All of the recipes have a puree or added nutritional value in them.  The above are just a few of the recipes.  There are many more!
